Whether you’re sneaking in veggies or serving up a party tray, these bite-sized delights are sure to please!

  • Total Time: 45 minutes
  • Yield: 2024 bites 1x

Ingredients

Scale
  • 2 cups all-purpose flour

  • 1 tablespoon active dry yeast

  • 1 tablespoon sugar

  • ½ tablespoon salt

  • ¾ cup warm water

  • 2 tablespoons olive oil

  • 2 large potatoes, peeled and grated

  • 1 cup cheddar cheese, shredded

  • ¼ cup green onions, finely diced

  • ¼ teaspoon garlic powder

  • Cooking spray or light oil for skillet

Instructions

  1. Prepare the Dough
In a large bowl, mix flour, yeast, sugar, and salt. Add warm water and olive oil. Stir until dough forms. Knead on a floured surface for 5–7 minutes until smooth and elastic. Cover and let rest for 30 minutes.

  2. Make the Filling
Grate potatoes and squeeze out excess moisture using a clean towel. In a bowl, combine grated potato, cheddar cheese, green onions, and garlic powder. Mix well.

  3. Shape the Mouthfuls
Divide dough into golf ball-sized pieces. Flatten each into a circle, add 1 tsp filling, then fold and seal into a ball.

  4. Cook the Bites
Heat a nonstick skillet over medium heat and spray lightly with oil. Cook bites, pressing gently with a spatula, flipping every few minutes until golden brown on all sides.

  5. Serve and Enjoy
Let cool slightly and serve with ketchup, sour cream, or your favorite dipping sauce.

Notes

  • Make-ahead tip: Prepare and shape mouthfuls, then refrigerate for up to 24 hours or freeze for later.

  • Freezer tip: Flash-freeze uncooked bites for 2 hours, then transfer to a freezer-safe bag. Cook directly from frozen, adding 1–2 minutes per side.

  • Want global flavor? Try Indian-style (add turmeric and peas), Mexican fusion (jalapeños and pepper jack), or Italian-inspired (basil and sundried tomatoes).
