Instructions

Cook the Lentils:
Rinse the yellow lentils thoroughly under cold water. Combine the lentils with 450 ml of water and a pinch of salt in a pot. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes until the lentils are tender. Drain any excess water and set the lentils aside. -
Prep Your Mix:
Mash the cooked lentils slightly while they are still warm. In a large bowl, add the mashed lentils, grated zucchini, salt, gluten-free flour, olive paste, black pepper, and cayenne pepper. Mix thoroughly until the batter holds together. It should be thick and slightly sticky. -
Shape and Fry:
Heat a few tablespoons of vegetable oil in a skillet over medium heat. Scoop out portions of the lentil mixture and shape them into patties with your hands. Place the patties into the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy. Once cooked, transfer the patties to a plate lined with paper towels to drain excess oil.
