For the Strawberry Cream Cheese Filling:

4 oz cream cheese, softened

2 tbsp powdered sugar

½ tsp vanilla extract

½ cup diced fresh strawberries

Instructions

Make the filling: In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in diced strawberries. Set aside.

Make the pancake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, eggs, melted butter, and vanilla. Combine wet and dry ingredients and stir until just mixed (do not overmix).

Preheat a non-stick skillet or griddle over medium heat and lightly grease.

Cook the pancakes: Pour about 2 tablespoons of batter into the pan and gently spread into a circle. Add a small spoonful of cream cheese filling to the center, then top with another tablespoon of batter to cover the filling.

Cook for 2–3 minutes or until bubbles form on the surface. Flip carefully and cook for another 1–2 minutes, or until golden brown and cooked through.

Repeat with remaining batter and filling.

Serve warm with extra strawberries, syrup, and whipped cream.

For smoother filling, blend the cream cheese mixture before adding strawberries.
