Ingredients

1½ cups (190g) all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

⅔ cup (130g) granulated sugar

2 large eggs, room temperature

½ cup (120ml) fresh orange juice (about 2 medium oranges)

1 tbsp orange zest

½ cup (120ml) vegetable oil

½ cup (120g) plain Greek yogurt or sour cream

1 tsp pure vanilla extract
Optional Glaze:

½ cup (60g) powdered sugar

1–2 tbsp fresh orange juice
Instructions

Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line with parchment.

Mix dry ingredients. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

Combine wet ingredients. In a large bowl, beat eggs and sugar until light and fluffy (2–3 minutes). Add orange juice, zest, oil, yogurt, and vanilla. Mix until smooth.

Fold in dry ingredients. Gently fold the flour mixture into the wet mixture using a spatula, being careful not to overmix.

Bake. Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out clean.

Cool. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Glaze (optional). Mix powdered sugar and orange juice into a smooth glaze and drizzle over the cooled cake.

For an extra citrus punch, brush warm cake with a little warm orange syrup made from sugar and juice.

Cake can be stored in an airtight container for up to 3 days at room temperature, or refrigerated for 5 days.
