  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups Grated zucchini

  • 1 cup Crumbled feta cheese

  • 1 cup Chopped spinach

  • 1/4 cup Finely chopped red onion

  • 2 Minced garlic cloves

  • 1/2 cup All-purpose flour

  • 2 Beaten eggs

  • 1/2 teaspoon Baking powder

  • 1/2 teaspoon Paprika

  • 1/4 teaspoon Salt and pepper

  • 2 tablespoons Olive oil (for frying)

Instructions

  • Prepare the Fritter Mixture
In a large bowl, combine all the ingredients: grated zucchini, crumbled feta, chopped spinach, red onion, garlic, flour, eggs, baking powder, paprika, salt, and pepper. Stir until the mixture is well combined into a smooth batter.

  • Cooking the Fritters
Heat olive oil in a frying pan over medium heat. Drop spoonfuls of the batter into the skillet, gently flattening each with a spatula. Fry each fritter for 3-4 minutes on both sides until golden brown and crispy on the outside, while the inside stays soft and flavorful.

  • Serve and Enjoy
Serve these warm fritters with a side of garlic tzatziki for an added burst of flavor. These fritters are perfect with a side salad or on their own as a snack.

Notes

  • Be sure to squeeze out excess moisture from the zucchini before adding it to the batter to avoid soggy fritters.

  • You can experiment with different cheeses like goat cheese or parmesan for added flavor.

  • These fritters can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or on a skillet for the best results.
